Puff-Pastry cups with Banana, chocolate and peanut-butter

A guilty snack this time!

This puff pastry cup with banana and, chocolate and peanut butter is a really great combo! At least for me it is.

Sometimes you just walk into the kitchen thinking you want something to snack, but you don’t feel like baking a whole loaf of cake or something like that.

And then you look into the pantry… and you have all these separate ingredients but not really a recipe to make something with those things.

but then.. the best thing get born, this was a day like that.

I had muffin tins, a few banana’s, chocolate, 100% peanut butter with pieces of peanut in it and puff pastry. And then I had this little combo oven and my love for sweets and baking.

Ingredients (for 4 portions):

  • 2 ripe bananas
  • 4 square puff pastry sheets (I used a basic brand from the dutch Supermarket Albert Heijn this one is vegan)
  • 8 tablespoons 100% peanut butter with bits of peanut
  • 160 gr. Pure chocolate

preparation:

Heat your oven on 200°C.

Get the puff pastry out of the freezer and leave to thaw.Vouwen bladerdeeg
Make sure you have a muffin/cupcake tray and that you line 4 of them with baking paper on the bottom or grease them well.

When the puff pastry is defrosted you fold each square in the middle of each side so it will form into a cup.
(don’t forget to get the foil off and put the powdered side downwards when you start folding.)

when folded into a cup press it down into the tins, don’t worry about stretching the dough a bit when you press it down. Just make sure it’s in there properly.

And then you can start filling them up!

Separate the chocolate into 4 portions and fill each cup with a small layer on the bottom.

Layer slices banana on top of that, use half a banana for each cup.

Scoop 2 tablespoons of peanut butter in each cup. And sprinkle the rest of the chocolate on each of them.

Put them in the oven for about 20 minutes and viola! When done you should get them out of the mold as soon as you can, or else the bottom of the cup will get soggy.

You can either leave them to cool or just dig in while there hot.

I thought they where really nice when hot, and they will probably even be better with a scoop of vanilla ice-cream!

Do be careful not burning your mouth when eating it hot though!
